Raspberry Roll

I should really have a “wow” category. First, let me make it clear that this exceeds my baking talents. This is a product from the Shabtai Gourmet (http://www.shabtai-gourmet.com/?page=products) bakery in New York.

Yes. They deliver. I received my order in two days and all I can say is “wow.” How is this possibly gluten free, let alone Kosher, lactose free, casein free, soy free and dairy free?? Yet, it is! Not to insult the bakers, but to me, it tastes exactly like my favorite Strawberry Zingers that I used to get out of the vending machine in high school. This is a very soft, moist rolled cake (how did they do that?) with a raspberry coconut filling/topping. This picture makes it look bigger than it is. It’s approximately 8″ long and 4″ high. The slices are not huge, so I would say this serves about 6 with two small slices to a plate.

*Note to people who don’t eat gluten free who are having gluten free guests for dinner: This is PERFECT. Even people who don’t eat gluten free would like it. Unfortunately, I didn’t open the package until breakfast, so I had it with my coffee (blasphemy…cake for breakfast). Yum!
